Pumpkin pie heaven :)

When you want to make something special...

Delicious fit pumpkin pie - it takes about 2 hours to prepare it, but worth it ;)

Why to choose this lovely fruit? Because it is

- highly nutritious

- rich in vitamins, especially vitamin A and C

- rich in antioxidants

- a blood pressure regulator

- an immunity booster

- a low calorie fruit

Crust ingredients

- 1 egg

- 250g oatmeal flour

- 100g butter or coconut oil

- 5g sweetener or honey

- 2 tablespoons sour cream

Mix the ingredients of the crust, roll it in a pie form and bake it for about 10 minutes at 190C.

After 10 minutes of baking, remove it from the oven and let it cool.

Pumpkin filling ingredients

- 800g pumpkin - cut in cubes, bake it in oven then remove the skin and let it chill in a bowl

- 150g heavy cream

- 100g sweetener or honey

- 2 eggs

- 0.5 teaspoon salt

- 2 teaspoons cinnamon

- 1 teaspoon ground ginger

- 1 teaspoon ground cloves

- pinch of ground nutmeg

- 1 teaspoon lemon zest and 1 tablespoon lemon juice

Mix the ingredients of the filling and beat together until it becomes smooth and creamy.

Pour the filling onto the crust then bake it together for about 30-35 minutes at 190C.

Enjoy it warm or cold with ice cream or a bit of cream.
